Stone hearth bake decks and independent upper and lower elements fine-tune top and bottom heat for uniform color and lift. Self-contained steam injection on each deck helps develop crackling crusts and glossy finishes on baguettes, boules, and laminated items.
Ecomode energy miser/governor curbs energy use between bakes, while retractable doors and an end-load layout speed loading in tight prep lines. With a standard 8″ deck height, capacity for two pans per deck, and heavy-duty legs with casters, the 2T2 moves easily and integrates cleanly into evolving workflows.
