The Carter-Hoffmann CH800 under-counter cook and hold oven helps busy kitchens streamline production while preserving food quality. Electronic controls let you cook by time or by product temperature using the included meat probe, supporting unattended, low-and-slow workflows. Place it beneath a workstation to free up floor space and keep finished items ready for service.
Adapt capacity to your menu: load (8) 18″ x 26″ sheet pans on optional wire shelves (end-loaded), or (8) 12″ x 20″ x 2-1/2″ and GN 1/1 pans (side-loaded, 2 per shelf), or (8) GN 2/1 pans (2 per shelf). Use it to roast overnight, stage banquets, or hold delicate proteins and sides at peak quality right on the line.
With approximately 120 lb meat capacity, the CH800 supports volume production without sacrificing consistency. NSF, UL, and CE certifications help meet operational and safety standards across foodservice operations and facilities.
