Electronic controls let you cook to time or to a precise internal temperature, using the included meat probe for consistency. This flexibility helps chefs standardize yields across menus, reduce rework, and align production with peak periods.
Configure the cabinet to your workflow: accommodate up to (16) 18″ x 26″ sheet pans on optional wire shelves (end-loaded), or side-load (2 per shelf) of 12″ x 20″ x 2-1/2″ or GN 1/1 pans.
