It handles (7) 18″ x 26″ full size sheet pans or (14) 12″ x 20″ full size hotel pans, supporting efficient batch cooking and menu flexibility. LED displays for temperature, timer, and humidity—plus auto-adjustment of humidity with temperature selection—help teams set precise cooking conditions quickly. A food probe enables accurate internal doneness, while the auto-reversing fan with speed control and an electronic braking system promotes even airflow and smooth chamber access. Workflow awareness is enhanced by a cool-to-touch glass door, flashing door light, and an audible alert. Four Grab n Go wire racks and a stainless steel interior and exterior are built for daily use. Engineered and assembled in the USA, this 80,000 BTU unit operates on 120v/60/1-ph and carries UL EPH Classified and cULus listings.
