A built-in humidifier and removable water reservoir pair with individual temperature and moisture controls to dial in exact conditions. Twelve pairs of adjustable tray slides, set 4-1/2 inches on center, accommodate either (12) 18″ x 26″ sheet pans or (12) 12″ x 20″ pans. Proof dough, hold roasted proteins, or stage plated meals without drying out.
